Tasting menu with the Chef: food and wine pairing with Etna Bianco Famiglia Statella

For the month of August, we could not miss a new tasting menu, this time dedicated to our Etna Bianco. The menu, on this occasion too created by my father Nino, chef and sommelier, is a tribute to the conviviality and lightheartedness of summer days, in which food and wine come together to give moments of pleasure and well-being.

Three courses with delicate and fresh flavors that, accompanied by the mineral sip and intense bouquet of white flowers and ripe peaches of a glass of Etna Bianco, will win you over.

Appetizer

Stockfish salad with mint and ginger

First course

Risotto with grouper fillets and tangerine-scented eggplant cream (alternatively, depending on the season, the chef suggests the use of lemon)

Second course

Amberjack fillet on potato rosti with saffron velouté
